Barùkas Apple Cookies @rodrigoalbanod

  1. 50g coconut oil
  2. 1 egg
  3. 2 cups coconut flour
  4. 2 tablespoons coconut sugar
  5. 1 teaspoon baking powder
  6. 1 pinch of salt
  7. 2 large apples peeled and diced
  8. Half lemon juice
  9. 1 cinnamon stick Barùkas nuts
  10. Optional: chocolate


  1. Mix apples, cinnamon, and lemon and simmer for a few minutes until the fruit is tender.
  2. Beat the mixture in your mini processor until puree and let cool.
  3. In a bowl, combine coconut flour, salt, baking powder, and coconut sugar. Reserve.
  4. Add the coconut oil and add the egg and apple puree.
  5. Mix until smooth and add dry ingredients, mixing until incorporated.
  6. Add the chocolate and Barùkas nuts and mix to distribute well in the dough.
  7. With two spoons, take portions of dough and pour them into a pan lined with parchment paper.
  8. Bake in a preheated oven at 180º and bake for about 15 minutes, or until golden on the edges.
