For the flatbread
- 1 cup of oat flour
- 1 cup of whole wheat flour
- 1 tablespoon of olive oil
- Salt to taste
- ½ teaspoon of baking soda
- ½ cup water
For topping
- Roasted Garlic
- 1 medium-sizeded roasted bell pepper
- Extra virgin olive oil for topping
- Cucumber for topping
- 1 large roasted tomato
- 2oz of Barùkas nuts
- Black pepper to taste
- Smoked Paprika
- 1 large lemon
- Pinch of oregano to taste for topping
Preparation
In a large bowl add dry ingredients to make dough, cover and set aside Roast the bell pepper, tomato and garlic In a blender or food processor add all the topping ingredients and blend until obtaining a coarse paste Divide the dough into smaller pieces of your desired size Preheat oven to the highest temperature Stretch the dough into a flatbread shape Using a spoon, top the raw dough with the blended topping evenly Place onto tray and place into the oven Allow to cook for 10-12 minutes and remove, allow to cool down Top with cut cucumber, olive oil, oregano and a bit of lemon juice ENJOY!!
